- 2 pounds about 4-5 large potatoes Yukon Gold or russet variety, cut into 1-inch cubes
- 3 tablespoons olive oil
- 4 cloves garlic minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika optional
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley optional, for garnish
Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Prepare the Potatoes: Cut the potatoes into 1-inch cubes. Place them in a large bowl.
Season the Potatoes: In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, and paprika (if using). Pour the mixture over the potatoes and toss until the potatoes are evenly coated.
