Ingredients
  

  • 4 large potatoes Yukon Gold or russet, cut into wedges
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp chili powder optional
  • ½ tsp dried oregano
  • ½ tsp dried thyme

Instructions
 

  • Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  • Prepare the Potatoes: Cut the potatoes into wedges, leaving the skin on for added texture and flavor. Place the wedges in a large bowl.
  • Season the Potatoes: In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, paprika, chili powder (if using), dried oregano, and dried thyme. Drizzle the seasoning mixture over the potato wedges and toss until the wedges are evenly coated.
  • Arrange the Wedges: Spread the seasoned potato wedges evenly on the prepared baking sheet, ensuring they are in a single layer and not overlapping.
  • Bake the Wedges: Bake the potato wedges for 25-30 minutes, or until they are golden brown and crispy on the outside and tender on the inside. Flip the wedges halfway through the baking time to ensure even cooking.
  • Serve: Remove the potato wedges from the oven and let them cool for a few minutes. Serve hot with your favorite dipping sauces, such as ketchup, ranch dressing, or sour cream.
